self.myCollectionView.collectionViewLayout.invalidateLayout() 

После:

Tr у реализовать протокол UICollectionViewDelegateFlowLayout, который используется для настройки размера ячеек, и использовать эту функцию:

func collectionView(collectionView: UICollectionView,layout collectionViewLayout: UICollectionViewLayout, 
      sizeForItemAtIndexPath indexPath: NSIndexPath) -> CGSize{ 
    let dishName = imagesURL[indexPath.row] 
     if let dishImage = ImageCache[dishName] { 
      return CGSizeMake(dishImage.frame.width,dishImage.frame.height) 
     } 

    } 

Этот код будет установлен как ширину и высоту ячейки, как и изображения, если вы хотите для использования другой ширины вам нужно изменить ширину в объекте CGSizeMake.
