Есть несколько вещей, которые я вижу, просто глядя на конфигурации.

У вас есть ваш ВХост конфигурации с именем

etc/apache2/sites-enabled/prestashop.config 

Но это не тот тип файла, который включается в файл apache.conf.

IncludeOptional sites-enabled/*.conf 

Ваша установка Apache ищет .conf файлы не.config так что, скорее всего, даже не читая файл виртуального хоста.

Также я бы поставил свой призрак таким образом и включил бы директиву Directory.
